The starter was too weak and not enough for the size of the jug provided. I would recommend brewing a half batch with it first to create a strong starter .

Use Inulin for first fermentation

Just received my kombucha kit and made a batch using your recipe for” almost sugar free kombucha”. The recipe calls for a rather long fermentation period which I will observe and monitor for pH and Brix #. I have read some scholarly articles regarding use of inulin instead of sugar for the first fermentation. This article shows that using inulin is very successful and takes much less time to ferment. Cadeau parfait!

J'ai acheté l'ensemble de kombucha pour ma mère afin de lui permettre de goûter au kombucha fait maison. Elle adore! Comble de bonheur, elle a déjà 2 scoby et elle prévoit faire 2 recettes plutôt qu'une seule. Elle me donne plus de conseils que je peux lui en offrir, car elle s'amuse à trouver ses prochaines recettes et à découvrir de nouveaux trucs. On s'amuse avec nos laboratoires respectifs!

Beginner very satisfied

I bought this book when it was released and it's one of the best purchases I've ever made in the cookbook I saw fermentation as an insurmountable and dangerous mountain, but the authors take us by the hand and reassure us with humor and good humor.The explanations are very clear, the many tips and varied recipes.And they show us that we do not need to buy tons of equipment to do well, often a good glass jar with lid is enough.
Since I bought the book, I have multiplied my fermentation experiences. I probably made one third of the book's recipes and I'm always satisfied. And I am now comfortable enough to improvise more, that is to say not to follow one of the recipes, but of course to respect the rules of fermentation explained at the beginning of the book.
