Thuja occidentalis (Northern White Cedar), commonly known as white cedar or just cedar, is a common tree in Canadian forests.

White cedar has long been used in infusions, particularly because of its high concentration of vitamin C.

The general belief is that this conifer was part of the native remedy used to cure Jacques Cartier's crew of scurvy!

Today, white cedar is used to treat infections of the respiratory system, such as the flu.

The infusion of white cedar in herbal tea or to flavour your kombucha and water kefir will give it an intense coniferous scent, with minty and slightly lemony notes.
